Recipe Cray !!! How To Make Cookie Dough Ice Cream Sandwiches
I had a lot of free time while I was back in Canada visiting my family. It was also hot as a mofo and it’s not common to have A/C in a city that snows 90% of the time. I was bored and had mad munchies one day so I decided to bake something since I don’t have the luxury of owning an oven in Hong Kong. After searching for a recipe for ice cream sandwiches, I found something even better – COOKIE DOUGH ICE CREAM SANDWICHES! As in ice cream sandwiched between egg-free chocolate chip cookie dough! I followed the recipe I found on Mels Kitchen Cafe and here’s how it turned out!
Ingredients:
1/2 cup (1 stick) butter
1/3 cup packed light brown sugar
1/4 cup granulated sugar
2 tablespoons milk
1/2 teaspoon pure vanilla extract
1/4 teaspoon salt
1 1/4 cup all-purpose flour
1 cup mini chocolate chips
Quart of cookie dough ice cream or whatever ice cream you prefer
Step 1: Start by making the base for the cookie dough. In a large microwaveable bowl, melt the butter with the brown sugar and granulated sugar. Stir to combine. Next, mix in the milk, vanilla, and salt.
Step 2: Stir in the flour until smooth. Since we’re not baking these, it’s important to get rid of any clumps.
Step 3: When the mixture has completely cooled, add the chocolate chips. You could replace chocolate chips for nuts, M&M’s, white chocolate chips, toffee, or whatever you prefer.
Step 4: Line an 8×8 inch baking pan with two pieces of parchment paper so they extend well beyond the edges of the pan on all four sides as shown below. This will make it easier to lift and remove the cookie dough from the baking pan.
Step 5: Spread half the cookie dough into the pan and use your hands to press it into an even layer. Place a second layer of parchment paper on top of the cookie dough. Place the remaining cookie dough over the second layer of parchment paper and again press into an even layer. You should now have two layers of cookie dough in your baking pan. Fold the overhanging parchment paper over the dough and leave the dough in your freezer for at least an hour.
Step 6: Once the cookie dough has set, you can remove the top layer of cookie dough from the pan using the excess parchment paper. You should also take out the ice cream from the freezer so it starts to melt and becomes more spreadable.
Step 7: Spread the softened ice cream over the bottom layer of the cookie dough in the baking pan.
Step 8: Place the other frozen cookie dough sheet on top of the ice cream and press down. Put this back in the refrigerator for at least 2-3 hours.
Step 9: Once frozen, remove from the baking pan using the excess parchment.
Step 10: Using a sharp knife, cut off the edges.
Step 11: Cut the cookie dough ice cream sandwiches into whatever size you desire.
Step 12: You can either serve these right away as is or wrap them individually in parchment paper and keep them in the refrigerator.
